Pickling is
a way to preserve food, both vegetable and meat. It usually works for at least six months. There
are two usual ways to do it. One is vinegar based (vinegar is a 5% acid as
usually sold in the USA), and the other is salt based (often with some fruit
acid added to help kill the germs). Both
methods seem to tolerate the addition of pickling spices, too.
Plan B is just
to eat it before it goes bad; to include sharing the food with the community as
makes sense. After all, most of us like to eat, and more importantly, to live.
