Lamb Kebab with Tzatziki

Ingredients (for 4 servings) 

1 pound of ground lamb
2 scallions, chopped
1 teaspoon of garlic powder
1 teaspoon of dried thyme
1 teaspoon of chopped rosemary leaves
1 teaspoon of fresh oregano leaves
1 teaspoon of onion powder
1 tablespoon of chopped parsley
1/2 teaspoon of cumin
2 cups of Greek yogurt
1 small cucumber
1/2 lemon
1 garlic clove
Salt and pepper to taste
Olive oil
8 stainless steel skewers


How to make the Kebab:

Mix together the lamb, scallions, thyme, garlic powder, onion powder, oregano, rosemary leaves, parsley and cumin. Season with salt and pepper to taste. Oil the skewers and form the meat mixture around the skewers, making a sausage shape by pressing the meat firmly. Refrigerate for at least 30 minutes.

Use a food processor to make the Tzatziki by mixing the yogurt, cucumber, garlic and juice of 1/2 lemon. Refrigerate for 1/2 hour before serving.

Brush the kebabs with olive oil before grilling them on a preheated grill for 3 minutes on each side. Serve with tzatziki and pita bread.
