Pickling spices
I used some store bought pickling
spices and some store bought concentrated lime juice to add some acid to the
mix (with some spring water), plus I labeled the lid. The container was a quart
Ball jar which I boiled out earlier, and the vege's I pickled were local garden
tomatoes, local garden potatoes, and
some store bought frozen broccoli pieces.
I figure to eat it come XMas time,
and it is stored in my refer for now. As
long as it meets my eyeball and smell test, I will eat it, and if I live, will
report same. No visitors should worry since this is my taste test.
I personally don't enjoy most pickled food (other than pickles) , but
it is a good way to preserve food, at least for a while, like up to six months,
I read.
Earlier I had added in too much
concentrated lime and even salt into a pickle mix, and did not enjoy the
result. But at least I did try, and know
for sure what I don't like.

Last, my mother really liked eating
pickled pig's feet, but the hair between the pigs toes always grossed me out. By the way, the pickled pig's feet used a vinegar and salt based pickling solution.
